MY FAVOURITE RECIPE


TASTY THAI CHICKEN

Ingredients:
• 8 chicken drumsticks
• 2 teaspoons of paprika
• 2 teaspoons of fresh grated ginger
• 1 teaspoon of ground cumin
• teaspoon of turmeric
• teaspoon of sambal oelek
(chili sauce)
• 2 cloves of crushed garlic
• 1 tablespoon of grated rind of lemon
• juice of half a lemon
• a bunch of fresh chopped coriander
• 1 tablespoon of oil

Method:
Add all the ingredients together and mix well with chicken (marinade for half an hour in fridge or overnight if desired).
Place chicken under grill on a low heat setting, cooking each side for seven minutes. Once cooked a little bit of lemon juice may be squeezed over the top of the chicken.Serve with rice and vegetables!
